Aqu\u00ed en  Miami, algunos lo preparan al carb\u00f3n, otros en olla el\u00e9ctrica; y en Hialeah hay quien lo \u201creinventa\u201d con salsa BBQ americana, pero manteniendo el esp\u00edritu de la receta:\u00a0<strong>color, aroma y ese sabor a hogar<\/strong>.<\/p>\n\n\n\n<p>En Espa\u00f1a, los cubanos exiliados lo hacen con pollo de corral y vino tinto; en M\u00e9xico, con chiles secos y un toque picante. En cada rinc\u00f3n donde hay un cubano, hay una versi\u00f3n distinta de este plato, pero todas comparten una cosa:&nbsp;<strong>la nostalgia<\/strong>.<\/p>\n\n\n\n<p>\u201cEsto sabe a mi casa\u201d, me dijo una amiga habanera en Tampa cuando prob\u00f3 mi versi\u00f3n. D\u00e9jalo reposar al menos 30 minutos (una hora si puedes).<\/li>\n\n\n\n<li><strong>Haz el sofrito.<\/strong><br>Calienta el aceite en la cazuela, sofr\u00ede la cebolla y el pimiento picados hasta que se ablanden. Agrega el tomate, el or\u00e9gano y el laurel. Este es el momento en que\u00a0<strong>la cocina empieza a oler a Cuba entera<\/strong>.<\/li>\n\n\n\n<li><strong>Sella el pollo.<\/strong><br>A\u00f1ade las piezas al sofrito y d\u00f3ralas ligeramente. No te apures, que el sabor viene con el tiempo.<\/li>\n\n\n\n<li><strong>Agrega agua o caldo.<\/strong><br>Cubre hasta la mitad del pollo, baja el fuego y deja cocinar tapado durante unos\u00a0<strong>40 minutos<\/strong>, removiendo de vez en cuando.<\/li>\n\n\n\n<li><strong>Rectifica la sal y el az\u00facar.<\/strong><br>Al final, cuando la salsa espese y el pollo est\u00e9 tierno, a\u00f1ade una cucharadita de az\u00facar para equilibrar la acidez del tomate.<\/li>\n\n\n\n<li><strong>El toque final.<\/strong><br>Apaga el fuego, destapa, y deja que se forme ese \u201c<strong>pringue resal<\/strong>\u201d al fondo: espeso, brillante, casi caramelizado.
